Sunday Pancakes

On a Sunday, we usually have something that involves a little less cooking for tea! I cant really remember how we fell into this, but we all really like it, and I especially like the break from cooking. We will often have scrambled eggs, or beans on toast, or our favourite-pancakes!

These pancakes are the drop scone type, rather than the tradiitonal crepe type ones we all ahve on Shrove Tuesday. But they have the advantage that you can pre-make a big load of the dry ingredients, and then make them quickly when you need to! The recipe is from Nigella Express,

For the pancake mix you need:

  • 600g plain flour
  • 3 tbsps baking powder
  • 2 tsps bicarbonate of soda
  • 1 tsp salt
  • 40 caster or vanilla sugar
  • Mix all the ingredients together and store in a jar! I tend to make a double batch and keep it in a breakfast cereal tupperware box thing. But then we do eat quite a lot of pancakes…

To make the batter and the pancakes:

For each 150g pancake mix, add and whisk together:

  • 1 free-range egg
  • 250ml milk (semi-skimmed or whole0
  • 1 tbsp melted butter
  • Heat a griddle or frying pan with no oil 
  • Spoon drops of 1.5-2 tbsps of batter into the hot pan

  • When bubbles start to show on the surface, flip them over to make them golden brown on both sides (a minute or so each side should do it)

I get 16 out of this usually. I make the first eight plain, and then add some raisins to the batter for the last eight.

Nigella suggests serving with blueberry syrup, but I just tend to pile jars of jam, peanut butter, chocolate spread and syrup on the table. I add a bowl of chopped or stewed fruit in the hope that someone will eat some, and also some soured cream, or mascarpone if there is some lurking in the fridge.

Any that are left (a rareity in this house) make great snacks cold for the Smalls the following day!
