Sausage Rolls! – Sustainable(ish)

Sausage Rolls!

Hubby swanned off the other day for a very lovely day at the cricket with my Dad and some friends (not that I am harbouring any grudges…;))

The day before he went, he was amassing the obligatory stockpile of food and announced he was going to make some sausage rolls. My response was very un Make Do and Mend like, and went something like “Really? Why? Why not just buy some?”
I know. I am ashamed.

Undeterred by his very grumpy wife, hubby trotted off to get some sausage meat having ascertained that we already had puff pastry in the freezer (I used to be quite scared of Puff Pastry, and have only very recently tried Nigella’s Rough Puff, which I would thoroughly recommend).

And they were AMAZING!!!

Perfect for picnics. And cricket matches….

This is what you need:

  • 500g good quality sausagemeat-no horses please…
  • Half a pack of Puff Pastry (or make your own Rough Puff-it is easy peasy)
  • A whole onion-peeled
  • An apple-peeled and cored
  • Handful sage leaves
  • 1 egg, beaten

This is what you do:

  • Whizz the onion and apple together in a blender and then squish together in a bowl with the sausagemeat using your hands to mix
  • Roll the pastry out on a floured surface to just bigger than A4 paper, and give it a bit of a bash with the roller to ‘knock the puff out of it a bit)
  • Cut in half lengthways and then cut across into strips about 5-10 cm wide (you should end up with about 14-16)
  • Put a ball of sausagemeat on each pastry piece and place a sage leaf on top
  • Use the beaten egg to brush along the sides and then ‘glue’ the edges together
  • Glaze the tops with the rest of the beaten egg
  • Put in the fridge to rest for half an hour
  • Pre-heat your oven to 180C
  • Take your sausage rolls out of the fridge and prick the tops with a fork, then bake for approx 25mins
  • If you can manage to leave them to cool for a moment before tasting, then you have more will-power than us!

Sausage rolls1

These are THE BEST sausage rolls I have ever had 🙂
A million miles away from the pale, flabby, excuse for a sausage roll that you can buy in the supermarket, AND you know exactly what has gone into them.

Enjoy 🙂
